What kind of fire extinguishers do you use and how to you mount them?

Um, the kind they sell in marine-supply stores? Anyhow, here's where I put mine. I thought close to the galley would be good.

Very nice. Thank you. Does it come with the mount?

Close to the gallery is good. But please do not put your fire extinguisher in a position where you would have to reach over the fire to use it. It would be absolutely useless in that case.

On the subject of fire extinguishers - I take the ISAF Safety at Sea course every 2 years and for the past couple of times I've done the course at a German navy base where they allow civilians in only a couple of times a year; that training is excellent as they have a wave-pool (one that creates real breaking waves), a hall for fire-extinguishing exercises and even a simulated hull where we get to play "plug-the-holes". One lesson that I've learned there is that the small fire extinguishers as found on boats (and pictured in this thread) are not up to dealing with a real fire. The picture below is of a simulated oil fire in the galley:
While I caught a good moment with the flames for the picture, the little extinguisher didn't have a chance at taming the fire. So while I still have a couple of "normal" small extinguishers, I have 2 much larger ones - going up just a little bit in size (hence volume of material) makes a big difference in capacity and efficacy.

I also wanted to add - make sure that your extinguishers have an expiry date on them. I was boarded in St. Martin once and I had just purchased 2 extinguishers but they had no date on them so the officers told me to get replacements. And this last season while in the USA I went to a Home Depot and wanted to get some extinguishers there but when I checked the dates they only had a couple of months left... caveat emptor. Oh, and for those interested, I put together a slideshow of pictures and clips from one of the ISAF courses at ISAF Slideshow

On a lighter note, here's a good decision-making matrix from xkcd:
