Does anyone know what mechanism is used to sense the water level in the water tanks on a 2007 54DS. I have 3 tanks and the meter does not appear to read correctly, so I think I may have a sensor on the tank that is bad but unsure how it works or where it is located.

Not sure if this helps, but if you have a Scheiber panel, the part listed below is the water tank sender adapter. It converts VDO, Scheiber and other sending units into a specific voltage the Scheiber panel can display as an accurate water level. On a 41 DS, it is located under the aft cabin mattress floor. I have also seen it on the other side of the same partition by the batteries. Scheiber part number : 50.BTE11009.00 Schreiber water tank module

No idea if it is the same as the 42DS and therefore the same as the unit mentioned by Valor323. You can check the tank if you can't find the box Valor323 mentions.
The tank "sensor" connects to the 50.BTE11009.00 unit via 5 wires. I say "sensor" as Jeanneau often put screws in the side of the tank with a wire from each screw. The alternative is a proper top mounted sensor with 5 wires with wires running back to where the 50.BTE11009.00 unit is located. Jeanneau save money by using screws instead of the sensor with 5 rods of differing lengths.
Another giveaway is that the water level only reads in discrete steps eg. 0%,25%, 50%, 75% and 100%. The 50.BTE11009.00 is actually pretty simple and takes a feed of 9-15V and voltage output changes in steps.
From 9Vdc to 15Vdc Output voltage in function of the water level : 1,00V < 1,10V < 1,20V empty tank 2,10V < 2,20V < 2,30V level ¼ 3,20V < 3,30V < 3,40V level ½ 4,35V < 4,45V < 4,55V level ¾ 5,50V < 5,60V < 5,70V full tank
Lots of reasons for this type to fail. One simple reason might be build up of slime inside the tank and that can register as water when it's damp.
