I found a nice PSMO tenderloin on St. Martin for an acceptable price and butchered/prepared the cut aboard the boat this afternoon. Those are tenderloin filets in the last picture!

That’s what I do also. I use a vacuum food sealer and they keep for months in the freezer.

I use a vacuum sealer as well. Not only for the steaks and freezer, but for dry pasta and rice and flour. That way it keeps longer and there will never be an critters crawling about in the food, either. I also vacuum seal my medical stuff and any other items that might oxidize. I love my vacuum sealer!
