After many years cruising around the Britisch Islands and the last years especially at the baltic Sea my wife received the diagnosis "arthrosis" in her hands.
Medical specialists brought up a lot of tips how to live with it, but they didn't have tips for life on board.
She will not be the only sailor with that problem. So may be someone can give tips how to .....
She has especially difficulties with her thumbs, she cannot make power with it.

ave no experience with the hands, but for the knees there are 3 type of injections and all of them helps...
also I have issues with my knees and I notice that when I'm in Greece all pain and discomfort disappears after the first week... e.g all this is personal, but in my case sailing in Greece solves the issue for me... the problem comes back after a month in UK...

Sorry I diverted this thread, but back to the subject - can you improve things for her like maybe adding a power winch?, where are biggest hurdles for her is with the actual sailing, or using the accommodation/galley/heads etc and can she climb on and off OK from pontoonand dinghy. There are some ingenious guys on this forum who might well be able to suggest specific solutions if you might give a few examples
