Two of the 4 hinges that allow the table “leaves” to fold up and lock in position have lost their springs that cause them to automatically lock in place. I’ve sourced replacement hinges (Thanks Amazon!), but when I tried to replace them, discovered the portion of the hinge that is secured to the side of the table appears to have been done with bolts, not screws like are used to secure the leaf to the hinge. Problem is, there does not seem to be a way to get to the inside of the table to hold the nut so the hinge can be removed and replaced. Any help would be appreciated.

Maybe try unscrewing what you can and then trying to gently pry the top loose? Try to slide a small screwdriver between the hinge and table. If they're friction fit or epoxied in they should pop out. This sounds pretty unlikely. I suppose that it's possible that they screwed it all together and then veneered over the front side thus burying the nuts? Also unlikely. It's a bit of a mystery.
If gentle persuasion doesn't work you're probably going to need power tools. Get a cobalt drill bit and drill off the heads of the bolts. That should let you separate the hinges from the table so you can see what's going on back there. You might be able to extract the buried hardware. Or even just grind it flush and then mount the hinges over a little so that you can screw into clean wood.
Good luck. David

Without a photo it's difficult to fully understand the problem.
Have you considered using a set on small Mole Grips (http://www.ebay.co.uk/bhp/mole-grips) to hold the bolt thread while turning the nut. It will be difficult but you might just have enough bolt to get a grip off.
