Having got a 1999 SO34.2 last summer, I am looking to reverse the forepeak and main saloon deck hatches from aft hinged to forward hinged to make it safer whilst at sea and also to allow the hatches to be left open when at anchor so the rain does not get in! I am prettysure it is a relatively simple job of unscrewing the hatch, removing the sealant and reversing it in the cutout. Has anyone done this with any advice before I start?

Don't know if you've done this by now, but here is what I was told by Alan Bruce, Sea Ventures superb commissioning manager (who's now sadly moved on). I too have a 1999 SO 34.2 and Alan reversed the hatches for me.
It is impossible to get the deck-frame off the deck without trashing it as the unattached frame is so flimsy you can't pry it off the sealant.
Alan regularly did the reversing job by unscrewing the hinge from the deck-frame and tapping new threaded holes to mount the hinges on the opposite side. The piece on the deck is completely AC/DC if you see what I mean.
I trust Alan's judgement but have no practical experience myself except to say his tapped threads are still working perfectly now.
